Birthday Cake Blondies are a fun, simple dessert that is sure to be a crowd-pleaser. A sugar cookie bar with heaps of sprinkles, they are perfect for any event!

My husband loves Funfetti cake. Just recently, he requested it as something he’d been craving lately. While I didn’t have all of the ingredients to make the cake homemade, I did have a white cake mix and a bin full of a variety of holiday sprinkles. Improvising never hurt anyone, right? I whipped up the cake mix and dumped in whatever sprinkles I could. To say the batter was interesting would be an understatement. There were everything from winter sprinkles to Valentine’s Day to Thanksgiving and everything in-between.

While the end product turned out okay, the cupcakes definitely could have used more sprinkles. All in all, they didn’t quite take care of hubby’s craving for Funfetti cake. Although I will say, the cupcakes didn’t last long.

Confetti Blondies

When I got the idea to make Birthday Cake Blondies, I felt that it would be just the sprinkle-y dessert that would take care of what hubby had been looking for. The taste is like that of a thick, soft sugar cookie with colorful confetti specks all throughout and on top. They are slightly sweet, buttery, and oh-so-yummy. They are even better warmed up for a few seconds – if any of them last long enough to cool off. But what cookie isn’t better, all warm and gooey?

Birthday Cake Blondies are super simple to make and can be ready in just about an hour. They are great for a get-together with friends, a cookout, or a children’s birthday party. After all, kids love sprinkles and all things bright and colorful, right? But kids aren’t the only ones who will love these bars. Adults will make them disappear so fast, it will feel like magic!

KITCHENAID STAND MIXER – My best friend in the kitchen, no joke! I cannot recommend this wonderful piece of kitchen equipment enough. I know it is an investment, but I can tell you it is one you will never regret making.
HAND MIXER
– If you’re not quite ready, or unable to, invest in a stand mixer, a hand mixer will also do a good job. Not to mention, it will definitely beat mixing batters by hand. I do still use my hand mixer on occasion and it does have its purpose.
8″x 8″ BAKING PAN
– Having baking pans of various sizes is a must for any baker. I use my 8″ square and 9″ square equally depending on the recipe. I firmly believe that you can never have too many baking pans. After all, what are you supposed to do if one is in the dishwasher, or you are making multiple goodies at once?
SPRINKLES
– This huge jar of sprinkles will last you for a while! You can use it to decorate, mix into batters or just snack on a few here and there.

Ingredients

  • 2 sticks butter, softened at room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups self-rising flour
  • 1 teaspoons baking powder
  • 1 1/4 cups rainbow sprinkles

Instructions

Preheat the oven to 350° F.

Cream together the butter and sugar using a stand mixer or hand mixer

Beat in the eggs and vanilla until just incorporated.

Add baking powder and mix in

Add flour 1 cup at a time, mixing until incorporated.

Stir in 1 cup of the rainbow sprinkles by hand.

Butter and flour an 8-inch square baking pan

Pour the batter into the pan, then sprinkle on the remaining 1/4 cup of sprinkles evenly over the top,

Bake in the oven for 40-45 minutes or until a toothpick comes out clean.

Cool at least 20 minutes before cutting into 12 bars
