Butterfinger S'more Bars

Butterfinger S’mores Bars are a treat that will take you straight back to childhood. Not the traditional S’more, they start with a graham cracker layer. The top is them smothered in marshmallows, caramel sauce, and crushed chocolatey Butterfinger candy. Can it get any better?

I’ll admit, when I found out last year that Butterfinger sold their recipe to another candy company and changed it, I was annoyed. Butterfinger was one of my favorites, and why would you mess with a classically good thing? Reluctantly, I tried the new and ‘improved’ recipe, just to see if I could tell a difference.

I could.

It was slight, but it was there. The best way I can describe the new recipe is Butterfinger flavor without the punch. Don’t get me wrong…they are still good. And made into Butterfinger S’mores Bars, they are downright outstanding!

THINGS I WOULD DO DIFFERENTLY

I must be honest; as amazing as these bars are, it wasn’t my most elegant experience in the kitchen. I ran into several…instances…that could have been prevented. More on that below…

For starters, I broke the graham crackers up into squares instead of leaving them in sheets. I filled in the gaps around the rest of the pan with smaller pieces so that the bottom of the pan was even. I feel that had I left the sheets whole where I could, there would have been fewer gaps for the melted caramel to seep down into.

Which leads me to my next point. Be extremely careful while melting the caramel and pouring it on top of the marshmallows. I poured a little too quickly and lost grip of the bowl. The result? Scalding hot caramel pouring on top of my fingers. I may have said a few cuss words. My memory is a little foggy because it hurt so freakin much. I spent the next 10 minutes or so running my hand under cold water.

STICKY, MESSY GOODNESS

But, pain aside, it was worth it. Why? Because the finished bars (once cooled in the fridge for an hour-ish) are sweet, crunchy, gooey amazingness.

I do feel the need to warn that as delicious as these bars are, they are also sticky and messy. I made the mistake (told you there were several instances!) the first time making them of not spraying the foil with cooking spray. In my mind, they were going to come out of the foil with ease. I thought that they would be fine. Ohhhh, no. They definitely were not. I was peeling a piece of foil off of each individual bar.

The caramel also melted down in between the graham cracker pieces. This made it so the bars gooed to the container I stored them in. We have literally been licking caramel off of our fingers. Not a horrible problem to have, though, am I right?

Next time I make these, there is one thing I will be doing differently. I will start by making an actual graham cracker crust out of graham cracker crumbs and butter. I’ll bake it so that it sets a base for the additional toppings. I feel that this will prevent the caramel and marshmallows from escaping out everywhere and will make for a cleaner eating experience.

Mess and burns aside, I will definitely be making Butterfinger S’more Bars again. They’re almost like eating S’more from around a campfire, but with a twist. And as with any S’more, it’s hard to stop at just one. Don’t say you weren’t warned!

Butterfinger S'mores Bars will take you right back to sitting around a campfire. You start with graham crackers layered with marshmallow, caramel, & loads of Butterfinger.

Ingredients

  • 5 graham crackers
  • 1 1/2 cups mini marshmallows
  • 5 oz milk chocolate chips
  • 9 oz of Caramels (I got a bag of the wrapped kind and left out 6 of them)
  • 1 1/2 Tbsp milk
  • 3 full Butterfinger bars, chopped into pieces
  • 1 oz milk chocolate chips (for drizzle)

Instructions

Line an 8 x 8 baking pan with foil. Leave a little extra so you can lift out of the pan later on.

Spray foil with cooking spray. ( Do NOT skip this step!)

Line bottom of the pan with graham cracker sheets. Break into pieces where needed to fill in the edges

Place marshmallows and 5 oz chocolate chips on top of graham crackers in an even layer.

Melt caramel and milk together in a microwave-safe bowl for 1 minute. Stir. Keep heating and stirring in 20-second intervals until smooth.

Pour caramel over the marshmallows and chips and gently spread until evenly coated and the marshmallows and chocolate start to melt.

Sprinkle chopped Butterfinger on top and press into the caramel/marshmallow layer

Melt semi-sweet chocolate in a microwave-safe bowl in 30-second intervals until melted and smooth when stirred.

Drizzle semi-sweet chocolate on top of Butterfinger.

Chill in the refrigerator for 1 hour

Cut into bars and enjoy!

      Hi! A Butterfinger is kind of like a crunchy, crispy peanut butter filling coated in chocolate. They are really tasty! 🙂
