Halloween Cookie Bars are a festive treat for any spooky season party. A double chocolate base, with a vanilla cookie layer and Halloween Sprinkles.

  • 1 cup butter, melted
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups + 1 Tablespoon all-purpose flour
  • 1/2 cup cocoa powder
  • 2 cups semi-sweet chocolate chips
  • 2 Tablespoons of Halloween Sprinkles

Preheat oven to 350° F. Line an 8" x 8" glass baking dish with parchment paper, leaving a couple of inches of excess around hanging over the edge.

Whisk together the butter and sugars until combined in a large bowl. Whisk in the vanilla and eggs until just combined.

Add the flour, mixing until just incorporated.

Pour half of the batter into a separate medium-sized bowl. Stir the cocoa powder and chocolate chips into one of the bowls until combined.

Add the sprinkles to the other bowl of batter, mixing until combined.

Place the chocolate batter into the pan and spread out into an even layer

Place the vanilla batter on top of the chocolate batter and spread out into an even layer.

If desired, sprinkle with extra Halloween sprinkles before baking.

Bake for 25-30 minutes or until a toothpick comes out clean after being inserted into the center.

Cool completely before cutting.

You can omit sprinkles or make them with other holiday varieties. Add white chocolate chips to the chocolate layer for a triple chocolate cookie base.
