I’ve been baking a lot lately.
Maybe it’s due to being cooped up at home for two months during the shelter-in-place orders, or perhaps it’s because I just love baking in general. Either way, it seems every other day a new baking experiment is making its way out of the oven and into our ever-waiting bellies. I mean, can you ever really have too many desserts when you have a sweet tooth?
For some reason, I’ve had my mind on making an extra chocolatey cookie lately. I have a staple chocolate chip cookie recipe that is my go-to to fill our cookie void here at home. It hasn’t let me down in the nearly 18 years that I’ve been making it. I wanted to try something different this time, though. I wanted chocolate chip cookies with a twist.
Double Chocolate Chip Cookies are just that. They have a rich chocolate base with semi-sweet chocolate chips incorporated into the dough. What you end up with is a soft, thick cookie that gives any chocolate lover precisely what they are craving.
Fresh out of the oven, these Double Chocolate Chip Cookies are soft, chewy, and almost melt in your mouth. Once cooled, they are soft, but a little denser and have a more fudge-like consistency. Their richness goes a long way, making them the perfect cookie to eat in small quantities. But what’s the fun in only having one cookie, am I right? Dipped in a glass of cold milk, you have a match that was made for one another.
The dough for these Double Chocolate Chip Cookies gets very thick. While I chose to mix the ingredients by hand, you can also use a stand mixer to make your life a little bit easier and give your arm a break!
For different variations, you can also use white chocolate chips or milk chocolate chips. If you want to get really crazy, use a mixture of all three! You can also add chopped pecans or walnuts if you like nuts in your cookies.
The great thing about this recipe is that it is very versatile. It’s yours to make however you see fit to satisfy your own chocolate cravings!
