Cookies and Cream Fudge Brownies are packed full of flavor and all of the things you love! If you love a chocolatey fudge brownie, this is the recipe for you! Moist and rich, then topped with homemade cream cheese icing and cookie pieces, this will become your go-to brownie recipe for years to come.
Brownies come in hundreds, if not thousands, of varieties. Everybody has their preference when it comes to the perfect brownie Some are more cake-like, while others are more fudgy. Some have nuts and others do not. Brownies can be iced or left untouched. Then there are all of the additions that can be added to the batter or to the top of the icing.
Then there is the great debate on center pieces or edge pieces
Luckily, my husband and I both love a good fudgy brownie. While he loves all the fixings, I am perfectly happy eating mine just plain. I mean, if a brownie is everything it should be, it doesn’t really need anything else! A combination of chocolatey, rich, and fudgy is the ultimate brownie!
Fortunately for hubby, I usually make things the way he likes them since he’ll be eating most of it anyway. So, these fudgy brownies with cream cheese icing and crumbled cookie pieces were born.
Making Cookies and Cream Fudge Brownies
One of the great things about Cookies and Cream Fudge Brownies is that no real heavy equipment is needed. Unlike most recipes where I recommend a stand mixer, all you need with this one is a bowl and a whisk. So easy, right?
You’ll start by whisking together your hot butter, oil, and sugar until they are well combined. About a minute should do for this step. Next, you’ll whisk in your eggs and vanilla. I usually like to stop mixing just after the eggs are well incorporated. Another minute of whisking is good here.
When whisking in your dry ingredients, the cocoa powder does tend to look like it isn’t mixing in too well. It almost looks like it is staying separate from the rest of the ingredients. Keep whisking it in gently until it incorporates (and it will). Once everything is mixed together, stop stirring. It’s important not to over-mix your batter. With any baked good, overmixing can and will affect the final baked product.
Making the Cream Cheese Icing
Now, this is where I may have fibbed just a little. To make your icing, you will want to use a hand mixer. I don’t know about you, though, but I don’t exactly consider a hand mixer heavy equipment! You can get a decent one for around $15 and it’ll get the job done.
To make your cream cheese icing, you’ll want another medium-sized bowl. Here, you’ll combine the butter, cream cheese, and powdered sugar. Unless you want a powdered sugar explosion all over your kitchen, I highly recommend starting your mixer on a low speed until the ingredients start to incorporate. After that, turn the speed up to medium and beat away until the consistency is light, fluffy, and whipped.

Once your brownies are out of the oven, cooled, and iced, it’s the moment you’ve been waiting for, as your brownies are ready to be finished and enjoyed.
For crushing your chocolate sandwich cookies, I just broke them into pieces with my fingers and sprinkled them over the icing. This method is a little messier, so if you prefer, you can always cut them up with a knife or mash them with a meat tenderizer (hey, it works!)
Once your cookies are crushed and sprinkled over the icing, your brownies are ready to be cut and served. The end result is a rich, chocolatey fudge brownie that will almost melt in your mouth.
Oh, and in case you were wondering…hubby won this round. The icing and cookies really do just tie it all together perfectly!

Cookies and Cream Fudge Brownies are exactly what you are looking for. This brownie packed with flavor and topped with cream cheese icing and crumbled cookie pieces. BROWNIES Preheat oven to 350°F Lightly grease an 8" x 8" baking pan with cooking oil spray. Line with parchment paper Combine melted butter, oil, and sugar together in a medium-sized bowl. Whisk until well mixed for about a minute. Add the eggs and vanilla and whisk for another minute. Stir in flour, cocoa powder, and salt. Gently stir the dry ingredients into the wet ingredients until JUST combined. Pour batter into prepared pan, smoothing the top out evenly. Bake for 22-25 minutes, or until the center is just set to the touch. A toothpick should come out dirty but not completely wet using the toothpick test. Cool to room temperature before icing with cream cheese frosting. Sprinkle top with crushed sandwich cookies. Cut into 12-16 brownies.
