Blueberry Streusel Muffins…there’s just something about them. Biting into a soft, fluffy muffin and getting a mouthful of fresh blueberry perfection. And is a muffin even a muffin without a streusel topping? I think not!
When you have an overabundance of blueberries lying around, muffins are a great way to put them to use. I can’t be the only one that HATES to throw out produce. If there’s a second use for it, I’m going to find it! There are just so many uses for blueberries, it’s s shame to let them go to waste unnecessarily.
These Blueberry Streusel Muffins are super easy to make, and you likely already have most of the ingredients hiding away in your pantry. No heavy equipment is needed, as you will be mixing the batter by hand. When stirring in the blueberries, you’ll want to fold in gently so the berries don’t burst open, although it won’t be the end of the world if they do.
It’ll look like you have A LOT of batter, but fear not, you won’t be left with extra. By filling the muffin cups to the very top, you’ll have just enough for 12 generously sized muffins. Once baked, they really puff up into a gloriously beautiful treat. As always, waiting for them to cool enough to eat will be the hardest part. Who else here just LOVES warm baked goods?
The finished result? A muffin that tastes as if it came straight from your favorite homemade bakery. Yum, right?!?! Serve with a small slab of butter, and all you’ll be left with is the thought that a dozen simply isn’t enough as they quickly disappear.

Spray a standard-sized muffin pan with cooking spray, including outside of the cups. In a large bowl, whisk the flour and baking powder together. Set aside. In a medium bowl, whisk together the melted butter and the sugar. Add the eggs, milk, and vanilla and incorporate well, Add the wet ingredients to the flour mixture and gently stir until combined. Gently stir in the blueberries. Fill the 12 cups of the muffin pan completely. Prepare the streusel topping by mixing together the sugar, flour, cinnamon, and butter. Sprinkle the streusel topping on top of the muffin batter. Bake for 17-20 minutes or until a toothpick comes out clean.
